Pickled Cucumber, Red Onion and Italian Spices

Cucumbers + Red Onion = Summertime flavors in a jar!
I love this combo of flavors … so fresh and tangy!
I use a canning jar because it has a wide mouth to put it all in and take it out!
I also like seeing how beautiful the colors of the light green cucumbers and the purple of the red onion … spices floating around…all melding together ready to use anytime!
1 cucumber
1 red onion
white vinegar, apple cider vinegar or white balsamic
1 Tbs olive oil
pinch sea salt
pinch rosemary, dried
pinch oregano, dried
pinch thyme, dried
pinch dill, dried
Chop up or slice the cucumber, red onion and put it in the jar. Add the vinegar to the about half way, add olive oil and then fill the rest with fresh filtered water.  Put the spices in and tightly seal the lid. Gently shake or roll the jar about to let all of the flavors mix and put it into the fridge.  Let meld at least 2 hours before serving.  Continue to add to the jar as the contents of the jar are enjoyed or as you get more cucumbers.  Some people add sugar, but I don’t because I have cut it out of my diet. It is up to you to add it but no more than a small pinch … try without first … better yet go the other way and add crushed red pepper flakes for a kick!
My grandmother used to make something similar year round for my grandfather.  She also added beets.  My grandfather ate it everyday and loved it! It made me smile with fond memories the other day when I just had to make this.  I have been using it on everything – salad in place of dressing, hamburger patty, fish, alone as a side dish or snack … the possibilities are endless, so feel free to add you other favorite summer veggies and spices.

Regardless of the weather or time of year at least you can taste the flavors of Summer!
As of today our Summer has consisted of 78 minutes of above 80 degrees … umm …
we have to get Summer any way we can this year!
