Ultimate Gluten-Free Pumpkin Spice Waffles

The leaves are blowing off the trees and swirling around on the streets.  We are full into FALL and all we can think about is PUMPKIN PUMPKIN PUMPKIN!  So why not make our favorite weekend breakfast even better! This Gluten-Free and Non-Dairy recipe is sure to please and trust me when I say these waffles are flavorful … nothing will be missed!  Your family and friends will beg for more!  
I have tried a variety of my waffle recipes to create all sorts of flavors and this one is another favorite! I love using So Delicious Pumpkin Spice, Non-dairy Coconut Milk because it adds the best flavor and consistency to my waffles to keep them light, airy and crispy, just like we love them! So Delicious Pumpkin Spice Coconut Milk is certified Gluten-Free and Non-GMO, I love that!   It is no secret I use their products all the time because I love them and buy them.
It just so happens, this week I received a gift package from So Delicious including their holiday beverages – Pumpkin Spice, Nog and Chocolate Mint Coconut Milk and their new Culinary Coconut Milk.  Thank you to So Delicious and you will see more recipes from me using their products this holiday season. My opinion was not influenced by this gift. I was actually just about to go to the grocery store to buy some So Delicious when the package arrived! Great timing!
pumpkin spice gf vegan waffles
Ultimate Gluten-Free Pumpkin Spice Waffles
Wet Ingredients
2 large eggs
3 Tbs melted non-dairy, non-soy buttery spread – Earth Balance – melted & cooled
1 tsp GF vanilla
1 Tbs maple syrup
2 Tbs Morris-Kitchen Ginger Syrup + more for on top!
1 3/4 cup non-dairy Pumpkin Coconut Milk – SoDelicious room temperature
approximately 1-2 Tbs for the waffle iron Organic Coconut Spread – Earth Balance
Dry Ingredients
2 pinches of sea salt
1 1/2 tsp GF baking powder
1/2 tsp cinnamon
1/8 tsp nutmeg
In a medium bowl, add the eggs, vanilla, maple syrup, ginger syrup.
Slowly add the Trovato flour a large spoonful at a time.  Mix well with a large silicone flat spoon.
Add some of the pumpkin spice coconut milk and then more of the flour, until both are completely added.
Add the cinnamon, baking powder and sea salt and mix well.
Please note that there may be some lumps and that is ok.
Let the batter sit and meld for 10 minutes while you heat up your waffle iron.
I like to place my waffle iron on a heat safe board.
Add some of the Organic Coconut Spread to the bottom of the waffle iron
and close it while it is heating.
Set the heat to medium-high to heat up for 10-15 minutes then reduce to medium to make the waffles.
Use a medium scoop to place the batter onto the waffle iron.
Cook according to your waffle iron settings.
This recipe makes 6 large round waffles.
Serve with non-dairy buttery spread and Maple and Ginger Syrup
for a lovely combination!
