I absolutely love Salmon! Today I received a special delivery from one of my favorite local grocery stores, Haggen Foods and Pharmacy in Bellingham, Washington. They offer the best Kulshan Sockeye Salmon from Kodiak, Alaska. What is Kulshan Salmon? Haggen Foods has partnered with Ocean Beauty’s Captain Roddy and their fisherman to catch Kulshan Salmon. “Kulshan” is the name of Captain Roddy’s boat and it is the Native American word for Mt. Baker. The branded Kulshan Salmon celebrates local sustainable practices and fisherman from the Northwest. When the crew catches the salmon they immediately put the fish into a chilled tank. The salmon are then sent on a fast journey to the Bellingham area Haggen stores.
Captain Roddy has been a fisherman for over 40 years. When he is not fishing he also serves as a board member of the local Bellingham Food Bank. In celebration, Haggen has asked bloggers to submit recipes to share with their customers. A donation of $50 will be donated to the Bellingham Food Bank for every recipe submitted. The top Kulshan Salmon recipes will be shared with customers, fingers crossed my recipe makes it!

Today I received this season’s freshest catch and have prepared my recipe especially for Haggen brand Kulshan Sockeye Salmon. I am even more thrilled that a donation will be made to the local Bellingham Food Bank! I am honored to know that I am part of this celebration, especially because I too have a passion to spread awareness for the need of Gluten Free food donations to support our Washington area Food Banks. It fills my heart to know that I am part of their dedication to supporting local sustainable companies, the Food Bank and fisherman. When I think of Kodiak I think of wood burning fires and salty sea air. I was inspired to create my Kulshan Sockeye Salmon recipe by adding my favorite Northwest flavors. The slight sweetness from the coconut oil blends well with the six spices. There is a bit of kick from red curry, grassy dill notes, garlic and it finishes with a fiery smoked sea salt and paprika. I enjoy keeping my salmon recipes simple and Gluten Free, by using just a few ingredient to enhance the flavor of the Kulshan Sockeye Salmon. My first bite made feel as though I was in Kodiak, sitting on a deck, overlooking the fishing boats as my freshly caught and oven roasted Kulshan Salmon was served at our table.
Kulshan Sockeye Salmon Oven Roasted with Northwest Spices
This recipe is for a one pound cut of salmon and 3 servings.
1/4 tsp smoked sea salt
1/4 tsp dill
1/4 tsp red curry powder
1/8 tsp smoked paprika
1/8 tsp granulated garlic
1/8 tsp fresh ground black pepper
1 Tbs coconut oil
Pre-heat the oven to 375 degrees. Heat the roasting pan and lid in the oven for 10 minutes.
While the oven and the pan are heating, place the spices into a small bowl to mix the spices and set aside.
Take the pan out and add the coconut oil. Carefully, spread the coconut oil all over the bottom and sides of the pan. Place the salmon, skin side down, in the middle of the pan.
Sprinkle the spices evenly on top of the salmon. Put the top on the pan and place the pan in the oven. Cook 5-8 minutes for a 1 lb. piece of salmon. The salmon is cooked when the color of the salmon turns light pink. Let the salmon rest for 3-5 minutes with the lid on the pan.
Serve with some fresh chopped chives and your favorite fresh mixed green salad with grape and cherry tomatoes.
