Gluten Free Cinnamon Popovers

I recently tried King Arthur’s All Purpose Gluten Free flour and absolutely love it! The funny thing is that the recipe for the Gluten Free Popovers is on the back of the box … how easy is that?!?! 
Sometimes you just need something decadent in the morning … a pastry … a real from the bakery kind of pastry that makes you swoon! 
Gluten Free Cinnamon Popovers 
did the trick and let me tell you …
Light, creamy, almost custard-like … airy …
sweet and cinnamony …
get your fingers and face kind of messy,
but in a good lip smackin’ deliciously decadent sort of way.
Ooh la la!
This is the recipe “hors de la boîte” … “out of the box”
Total time to make and bake is less than an hour and you can stay in your PJ’s and Robe!
Gluten Free Cinnamon Popovers
4 large eggs
3 Tbl. melted butter (I used Earth Balance non-dairy butter)
1 1/4 cups of lukewarm milk (I used coconut milk)
1/4 tsp. xanthan gum
1/2 tsp. seasalt
Preheat oven to 400 degrees. Grease a 12 cup popover pan. If you don’t have a popover pan, no worries, I used a muffin pan and it worked great!
Whisk together the wet ingredients – eggs, butter, milk in a large bowl.
In a separate bowl whisk the dry ingredients – flour, xanthan gum, salt and *I added a tsp. of cinnamon to my dry ingredients because … I love cinnamon!
Mix the wet ingredients with the dry until smooth.  Pour the batter into the pans about 2/3 full.
Bake at 400 degrees for 25 minutes, then reduce the oven to 350 degrees and bake an additional 15 minutes until the popovers are golden. Carefully remove from oven and try your best to wait for 5 minutes to cool in the pan. 
While the popovers are baking … prep  2 bowls –
one bowl with 2 Tbl. cinnamon and 1/2 cup of sugar – mix well.  Melt 3 Tbl of butter or non-dairy butter in the other bowl, I melted it in the microwave for 30 seconds. Another variation would be to add orange zest to sugar or use some homemade vanilla sugar.
When the rolls have finished baking and are cooled to the touch, take them out of the pan.  Brush the melted butter on the and roll the warm rolls and then roll in the cinamon and sugar mixture before serving.
